How we bake
Slow dough, early mornings, nothing rushed.
Every loaf takes three days. This is the last night of it, from the afternoon mix to the morning doors.

4 p.m.
Mix
Stone-milled Ontario flour, water, salt and a starter we feed twice a day. Then the dough rests.

9 p.m.
Laminate
A block of cold butter folded into the croissant dough, three turns by hand, then into the walk-in overnight.

4 a.m.
Bake
Loaves and trays go into the deck oven while the street outside is still dark.

7 a.m.
Doors
Shelves full, coffee on, doors open. Two doors from the lake.
